Grape variety Assyrtiko 95% , Aidani 3%, Athiri 2% .
From the vineyards nearby Akrotiri and Megalochori area. After a short pre-fermentation cold maceration the must is moved in French oak barrels, with capacities of 225, 300, and 500lt, where the whole fermentation takes place for better integration of the oak aromas and flavors. Maturation for 4 months on fine lees with battonage.
